"Those russian piroshki are a real delight for the eyes - make them at home to try and taste them."

Ingredients

  • For the dough
  • milk - 1 cup (about 230 ml)
  • dry yeast - 10 g
  • eggs - 3, beaten
  • butter - 100 g
  • flour - 800 g
  • vegetable oil - 1 tbsp.
  • salt - 1 tsp.
  • sugar - 1 tsp.
  • For the filling
  • mince - 500 g
  • gherkins - 5 medium
  • onions - 1 small - medium
  • tomato puree - 2 tbsp.
  • salt and pepper to taste

How to make

To make the dough, in a large mixing bowl combine the yeast, salt and sugar, and a small fraction of the fresh milk (1 and 1/2 tbsp). Leave the mixture at room temperature till you can see small bubbles appearing on the surface.

Sift the flour and add the beaten eggs, vegetable oil and the rest of the fresh milk. Combine with the yeast mixture and knead the dough till soft and fluffy.

Oil the dough lightly on the outside and leave to rise.

While the dough is resting you can make the filling. Heat a small amount of the vegetable oil and sauté the onions, mince and tomato puree till they are nearly cooked. Add the cubed gherkins and the spices towards the end. Take off the heat.

When the dough has risen roll it out flat into a shape of your choice using a rolling pin. We like triangles as they are easier to work with and come out pretty.

Cut out your triangles and place some of the filling in the middle, folding the edges over it. Leaving a small opening in the centre to help the air escape while baking.

Arrange your little patties on a tray and bake in a preheated oven at 200°C till nice and golden.
