How to make
Boil the beef in 6 1/5 cups (1.5 liters) of water with the coarsely chopped onion, 2 whole carrots, 1/2 bay leaf, a few black pepper peppercorns and salt. Strain the boiled meat from its broth and debone, if needed.
Cut it into pieces with the carrots and return it to the hot broth. Add the diced potatoes and peas, after which let the dish simmer until it fully cooks.
Once ready, sprinkle with chopped parsley.
