Ingredients

  • couscous - 1 2/3 cups (400 g)
  • zucchini - 21 oz (600 g)
  • onions - 1 medium
  • garlic - 2 - 3 cloves
  • oil - 2 tbsp
  • olive oil - 3 1/3 tbsp (50 ml)
  • dill - 1 bunch
  • salt - 1/2 tsp or to taste
  • black pepper - to taste

How to make

Boil the couscous in salted water, rinse and drain out the water. Cut the onion into cubes, the garlic into slices and sauté in oil and a little water until softened.

Cut the zucchini into round slices or lengthwise (not too thick) and then cut them very finely on the shorter side. Add the onions and sauté them until they slightly soften.

Drain the couscous, place in with the vegetables, add olive oil, chopped dill, a little salt and black pepper. Serve warm or cold, as desired.

Couscous with zucchini is a wonderful pasta salad that is usually served cold. Bon Appetit !
