Ingredients

  • eggs - 4
  • vegetable oil - 2/5 cup (100 ml)
  • milk - 1 cup (260 ml)
  • bananas - 2 cups, puree (mashed bananas)
  • sugar - 1 and 1/2 cup
  • flour - 5 cups
  • nutmeg - 1 pinch
  • cinnamon - 1 pinch
  • vanilla - 2 powder packets
  • baking powder - 1 packet
  • baking soda - 1/2 tsp
  • blueberries - around 2/3 cup (150 g), dried

How to make

Beat the eggs with the oil well and add the milk and mashed bananas. Separately, mix the dry ingredients - flour, sugar, baking powder, baking soda, vanilla, nutmeg and cinnamon. Add the dry ingredients to the liquid and mix.

Then mix them with the dried blueberries. Distribute thus prepared mixture into pre-greased muffin cups, don't fill them all the way to the top. Bake the muffins with dried blueberries and bananas in a moderately heated oven until your toothpick comes out dry when you poke them.

You will get 10 rather large muffins, but with smaller cups, you can get twice as many.

What or how much is in a packet of Vanilla and Baking Powder? Also, what temperature is a "moderately heated over"? Sorry but I have never heard of a packet of vanilla or baking powder. I would have to guess at what a moderately heated over temperature is. I would like to make these. Thanks in advance.
