Begin by preparing the batter for the apple cake. In a large mixing bowl combine the eggs and sugar. Using a mixer on medium speed, beat the mixture for several minutes until it becomes pale, fluffy, and noticeably increases in volume. This step is important because incorporating air into the batter helps the cake become lighter and softer when baked.
Once the mixture becomes airy and creamy, slowly add the oil in a thin stream while continuing to mix. The gradual addition helps create a smooth and stable batter.
Add the cinnamon to the mixture. Cinnamon enhances the natural sweetness of the apples and gives the cake its warm and comforting aroma.
In a separate bowl sift together the flour and baking powder. Sifting the dry ingredients helps remove lumps and makes the flour lighter, which contributes to a softer cake texture.
Gradually add the flour mixture to the egg mixture while mixing gently. Use a spatula or a mixer on low speed and stir just until a thick and smooth cake batter forms.
Peel the apples and grate them on a coarse grater just before adding them to the batter so they do not darken. Add the grated apples to the mixture and stir gently until they are evenly distributed throughout the batter.
Prepare a cake pan or small baking dish by lightly greasing it with oil or lining it with parchment paper. Pour the batter into the prepared pan and spread it evenly.
Preheat the oven to 150°C (300°F).
Bake the apple cake for about 50-60 minutes until the top becomes lightly golden. To check if the cake is done, insert a wooden toothpick into the center. If it comes out clean, the cake is fully baked.
After baking, allow the cake to cool for about 10-15 minutes in the pan. Then remove it carefully and place it on a wire rack to cool completely before slicing.
