How to make

The milk is put to boil with half the sugar and the eggs are beaten with the remaining sugar, then add semolina. When the milk boils, pour it into the egg mixture and stir constantly until the cream thickens. Removed from the heat, add vanilla and then the cream is allowed to cool. Preheat oven to 360°F (180 °C).

Grease a large and deep tray with melted butter. Arrange half of pastry as between any two must be some melted butter. Pour the cream and smoothe it, then the other half of pastry, again greased with butter them.

The crust at the top also smeared with oil. Bake for about 45 minutes until it gets a golden tan. To prepare sugar syrup, mix sugar in a saucepan, with water and cinnamon and citrus peels + a tablespoon of rum or brandy. The syrup boils for about 6 minutes and is cooled and filtered.

The pie is left to cool and then syruped while still warm. Serve chilled, sprinkled with powdered sugar or cinnamon.
