Ingredients

  • beans - 1 cup red, can use tinned ones too
  • turmeric - 1/4 tsp powdered
  • water - 4 cups
  • salt
  • chilies - 1. green
  • oil - 2 tablespoons
  • onions - 2 heads
  • ginger - 1 tsp ground
  • garlic - 1 tsp crushed
  • tomato paste - 2 cups puree or canned
  • cumin - 1/2 tsp
  • turmeric - 1/2 tsp powdered
  • coriander - 1 tsp powdered
  • garam masala - 1 tsp
  • coriander - to garnish, fresh

How to make

Pre-soak beans for 1 night and the next day, boil them with turmeric, salt and chili. Fry in hot oil, add onion and crushed ginger and garlic.

Add tomato paste, coriander powder, cumin, 1/2 tsp garam masala and turmeric.

Finally add the beans. Serve this vegetarian curry with red beans on a bed of cooked rice and garnish with fresh coriander.
