Ingredients

  • einkorn - 7 oz (200 g) (can mix it with some rice or bulgur)
  • peppers - 10 large
  • carrots - 2
  • onions - 1 head
  • leeks - 1 stalk, white part
  • tomatoes - 2, ripe
  • oil - 2/5 cup (100ml)
  • parsley - 1/2 bunch
  • salt
  • black pepper - to taste

How to make

Boil the einkorn to a semi-cooked state for about 25 minutes. Heat oil and fry the chopped carrots, then add the leeks, onion and semi-boiled einkorn. Stir well and add the finely chopped tomatoes, then mix thoroughly.

Season the mixture with spices generously. Clean the peppers from their seeds and fill them with the mixture. Arrange them in a greased baking dish. Finally pour hot water halfway up their height.

Put aluminum foil in the tray. Put the stuffed peppers with einkorn to bake for 45-50 minutes at 430°F (220 °C). Remove the foil and bake until they get a nice tan (about 40 minutes).
