Ingredients

  • eggs - 2 (1 yolk for smearing)
  • water - 1 cup (250 ml) cool
  • yoghurt - 3 tablespoons
  • yeast - 1 packet, dry
  • sugar - 1 tablespoon
  • salt - 1 tsp
  • oil - 3 tablespoons + some for smearing the sheets
  • flour - 2 1/2 cups (600 g) + 2/5 cup (100 g) for kneading
  • sesame seeds
  • poppy seeds

How to make

Pour the sugar, yeast and a little flour in a little of the cool water. Leave it to activate and then knead a medium hard dough with the remaining products. Leave for about 30 min. to rise.

Divide it into 4 equal parts and 1 small ball for the flower in the middle. Roll out 4 round sheets, arrange them on top of each other with oil in between them (don't oil the top one).

Put a small cup in the middle and mark out 8 parts. Cut each of those into 3 and weave them together by folding the edges underneath. See photos if you're confused.

From the small ball of dough, roll out a sheet and cut out flowers with a form, arrange them one atop the other. Leave the pita to rise, then smear it with the beaten yolk, a little water and oil, sprinkle the seeds and bake in a preheated 340°F (170 °C) oven.

The pita will be ready in about 35 min. but it does depend on the oven.
