"A pita to treat a couple friends to before it`s gone because we all know they`re tastiest when hot."

Ingredients

  • flour - 2 cups (500 g)
  • milk - 2/3 cup (150 ml)
  • water - 2/5 cup (100 ml)
  • eggs - 1 white
  • yeast - 1 1/3 tbsp (20 g) fresh
  • salt - 1 tsp
  • sugar - 1 tsp
  • oil - 2 tablespoons
  • eggs - 1 yolk, for smearing on the pita
  • milk - 1 tablespoon, for smearing on the pita

How to make

Crumble the yeast in the cool water, add the sugar, 1 tbsp flour and stir well. Cover and once the yeast effervesces add the water and egg white. Make a well in the flour, add the salt and liquid mixture in it.

Knead a nonstick dough, transfer to a greased container, cover and wait for it to rise. Cut the risen dough in 2 and use oiled hands to shape 2 long wicks.

Cut each of them into 3 lengthwise and weave them together into 2 weaves. Put them in an oiled tray and smear with the egg yolk beaten with a little milk. Put the pita to bake in a preheated 390°F (200 °C) oven on the lower element only.

Once it's risen, lower heat to 360°F (180 °C) and turn upper element on as well. Bake until ready.
