Black trumpet mushrooms are not particularly popular in some places and probably the main reason for this is that they are very rare. You will recognize them by their funnel shape and dark color, and to some extent they also resemble the grey chanterelle.
If you are not an experienced mushroom picker, however, we would advise you to buy them from the mushroom gardens where they are grown cultivated or you can get dried mushrooms from the shops.
The latter should not bother you, because even when dried, this mushroom has a very pleasant aroma. Last but not least, we will add that they are often compared to truffles in taste.
Here are some ideas of what you can cook with trumpet mushrooms.
Salad with trumpet mushrooms
A classic salad with trumpet mushrooms is, after blanching them, to add them to torn iceberg leaves, a few cloves green garlic, olive oil, balsamic vinegar, and salt to taste.
You can also rely on a French recipe with trumpet mushrooms, for which besides the mushrooms, however, you will also need some drunken red morello cherries, honey and spices. The trumpet mushrooms are blanched again in water to which you have added a little salt and allspice.
After removing the mushrooms from the water and draining them, add a little honey, olive oil, balsamic vinegar, finely chopped spring onion, salt and black pepper to taste. Mix the salad and serve it with a few drunken morello cherries on top. The French know their stuff!
Stewed trumpet mushrooms
All mushrooms are great for stewing, which you probably know how to do. It is best to stew them in butter and season them with salt and black pepper after cutting them. You can add finely chopped fresh garlic to them during their stewing.
Mushroom soup with trumpet mushrooms
There aren't any more special mushroom soup recipes that are specifically for trumpet mushrooms, so this is where your product imagination has to run wild. We advise you to add parsnip root to your soup. It is said the trumpet mushrooms soup is really special!
Main dishes with trumpet mushrooms
The trumpet mushrooms go with very well both with rice and potatoes, as well as with pork, beef and chicken. All kinds of stews with mushrooms and dishes are prepared with them.
A great recipe suitable for using this type of mushroom is to make chicken julienne with trumpet mushrooms. Season the meat to your liking and fry it in a little oil. When it is ready, transfer it to the plate in which you will serve it.
In the same cast iron pan also stew the trumpet mushrooms, pour them over the meat and season with chives and parsley. Great and exquisite taste!
