Calamari belong to the group of cephalopods, just like octopuses and oysters. They look like a small cuttlefish, but with a longer body. Adults reach up to 19.7″ (50 cm) in length, but the most preferred ones in the culinary world are those with a length of about 3.9″ (10 cm).
Clean calamari are usually available in stores, but even if you come across ones that aren't cleaned, don't worry - it's not difficult to do it yourself.
First, separate the head from the body with a slight pull. Cut the tentacles at eye level, cut them into pieces and discard the rest.
Carefully remove the entrails, if desired, you can keep the ink sack. Remove the inner soft bone and rinse the body and tentacles well under running water.
Last but not least, peel the skin and you are ready to prepare delicious breaded calamari, greek-style calamari or grilled calamari.
