Apricot fruits, also known for their kernels, are found inside the hard stone of the fruit.
Apricots kernels contain a substance called amygdalin that releases cyanide after it is consumed. If you are going to eat apricot kernels, make sure you don't eat more than the recommended daily amount or you could get cyanide poisoning.
Avoid eating more than 3 small apricot kernels per day. According to the European Food Safety Authority (EFSA), people who eat more than 3 apricot kernels per day are at risk of developing cyanide poisoning.
Cyanide poisoning can cause the following symptoms:
- Headache;
- Nausea;
- Fever;
- Insomnia;
- Fatigue;
- Nervousness;
- Muscle and joint pains;
- Low blood pressure.
Studies show that 0.5 to 3.5 milligrams of cyanide per kilogram of body weight can be fatal.
The safest dose of amygdalin is 0.37 grams or 3 small apricot kernels per day. Higher doses can cause health risks.
On the other hand, apricot kernels are composed of the following nutrients:
- 45%-50% fat;
- 25% protein;
- 8% carbohydrates;
- 5% fiber.
In addition, apricots kernels are rich in healthy fats that help lower bad cholesterol. Essential fatty acids such as omega-6 and omega-3 fatty acids help fight heart disease, improve mental health, and provide other health benefits.
