How to Dry Quinces?

Quinces are one of the last autumn fruit, after them only medlars are picked. They can be stored fresh in cool and airy rooms, can be made into jams, marmalades and compotes or they can be dried. Quinces are very easy to dry, but you still need to follow some rules.

First of all, the fruit can be dried both whole and cut. Smaller fruit like cherries, blueberries, plums, figs, etc. are dried whole, but apples, apricots, pears and quinces are dried sliced. For this purpose, choose healthy quinces that do not have injuries and damaged areas. Wash them very well and cut them into not too thick pieces and thoroughly clean them of the seeds.

Dip them for about 3 minutes in salt water - add 1 tsp. of salt to 1 liter of water. Then arrange the quince pieces on a wire rack and put them out to dry in the sun. As soon as it gets dark, collect the fruit and the next day at sunrise, take them out again.

Repeat the procedure, until the fruit are dry. Be careful not to dry them out too much, because they won't be very tasty. Store dried quinces in tightly closed plastic bags in cool and dry places, away from various insects and direct sunlight.
