How to make
Sift the flour. Dissolve the yeast in a little cool water with 1 tsp flour and the sugar. Leave it to activate.
Once the yeast is ready, add it to the flour, break in the eggs, add the salt and olive oil. Stir. Pour cool water in a thin trickle, let the flour absorb it. Knead a soft, nonstick dough.
Leave the dough to rise, covered in plastic wrap.
Divide up the dough into 10 balls.
Melt the butter.
Roll out each ball into a pita. Dip each in the melted butter. In the middle of 1/2 the pitas put a piece of feta cheese and a piece of cheese in the other 1/2.
Roll up the pitas into balls again, wrapping them around the filling.
Smear the bottom and sides of a cake form with butter. Sprinkle paprika.
Arrange the balls in the form in a pita-like arrangement.
Pour on the rest of the butter on top and sprinkle more paprika.
Leave the pita to rise again.
Put the pita in a moderate oven to bake about 15 min., then turn the heat up to 390°F (200 °C) and bake until golden.
Check to see if the pita is ready with a wooden skewer.
