How to make
Cut the chocolate into very small pieces.
Put the yolks and sugar in a bowl, beat to a pale yellow creamy mixture, add the cocoa, salt, vanilla, starch and stir.
Pour 1/2 the milk into a casserole on the stove, heat it and leave to boil.
Add the rest of the milk to the bowl with eggs and stir with a whisk to a homogeneous cocoa mixture.
Once the milk reaches boiling point, lower the stove to moderate heat and while stirring nonstop pour in the prepared cocoa mixture in a thin trickle.
Stir constantly, once it starts to thicken add the crumbled chocolate, butter and liquid confectionery cream. Stir again, be careful not to burn it on the bottom and have it stick, leave to bubble for 2 min. and take off the stove.
Drain the pears from the juice, cut them into small cubes.
Take 4 bowls or cups and fill them halfway with the pudding. Distribute the pieces of pears into them and cover with pudding.
Decorate as desired. I put a biscuit, pear slice and then sprinkled crumbled walnuts on top.
