  • mackerel - 2 - 3
  • onions - 3 - 4 heads
  • carrots - 3
  • tomatoes - 4
  • black pepper
  • salt
  • bay leaf
  • olive oil

How to make

Clean the fish, cut them in 2 halves lengthwise and place in a suitable tray. Cut the onions into crescents, the carrots into semicircles and grate the tomatoes. Heat 2-3 tbsp olive oil and braise the veggies until semi-cooked.

Season with salt, black pepper grains and bay leaf and pour everything over the fish. Cover with foil and bake 15 min. in a preheated 360°F (180 °C) oven, then remove the foil and bake until done.
