How to make
Put the cream in a bowl, add 1/2 cup of water. Grate in the cheese, processed cheese and crumble in the blue cheese. Stir and season with black pepper.
Wash the broccoli and tear it into small rosettes. Put water in a pot and bring to a boil.
Put the broccoli rosettes in the boiling water for about 1-2 min. to soften. Take them out, put in a colander and rinse under cold running water or better yet, put them in a bowl of ice. This will allow them to retain their nice green color.
Arrange them in a tray, pour on the creamy mixture and put in the oven at 360°F (180 °C) for about 20-30 min. until the cheeses melt and gain a golden crisp.
Serve with meat.
