Ingredients

  • pork fillet - 22 lb (10 kg)
  • sea salt - 2 packets
  • cayenne pepper
  • paprika - for rolling
  • black pepper - ground

How to make

Shape the fillets. Pour sea salt at the bottom of a tray. Arrange the fillets. Sprinkle them generously with sea salt and make sure to cover them on all sides with plastic wrap.

Leave them for 24 hours to take in the salt. Clean the prepped fillets from the salt.

Mix 2 parts sweet paprika and 1 part spicy cayenne pepper. Add the ground black pepper (amount as desired). Stir.

Roll the fillets on all sides in the pepper mixture. Using a needle and thread, make handles.

Hang them up on a pole and leave in a ventilated area for about 7-8 days. Put the ready fillets away in bags in the freezer to prevent them from drying out.

Cut them thinly when serving! Pour yourself a glass of red wine as well. Cheers!
