How to make
Sift the flour in a bowl, add the salt and stir. Make a well, break the egg in it, add the pre-mixed together yoghurt, vinegar and baking soda. Knead a soft but slightly sticky dough.
Cover the dough with a moist towel and leave it for 20 min. to relax. Roll it out onto a floured counter using a rolling pin into a sheet 1/4″ (0.5 cm) thick.
With a round cutter (or glass) cut out circles from it. Heat oil on a low stove and put the cut out fritters in it carefully.
It takes just 10-15 seconds for each fritter to brown, then flip it to the other side. Fry until you obtain the color your family likes.
Take the fried fritters out and put them on a container laid out with paper towels, to drain away the excess oil.
In some of them you can even put a filling of feta cheese or cottage cheese, mixed with 1 tsp margarine, or even your favorite spices, such as oregano, mixed spices or parsley.
Notes: The ingredients for these quick fritters need to be at room temperature. You can slightly heat the yoghurt in a microwave or on the stove if needed.
