Ingredients

  • cherries - 2 cups, fresh, pitted
  • almonds - 2 tbsp, peeled and chopped
  • eggs - 3
  • sugar - 1 cup
  • brown sugar - 1 tbsp
  • flour - 1/2 cup, sifted
  • salt - 1 pinch
  • milk - 1 cup, full fat
  • almond extract - 2 tbsp, or Amaretto
  • vanilla - 1 1/2 tbsp, extract
  • powdered sugar - for sprinkling

How to make

Heat the oven to 360°F (180 °C). Butter a rectangular oven dish. Stick the peeled and chopped almonds in the pitted cherries. If you don't have the time to do this, just mix the almonds and cherries together at the bottom of the oven dish.

Mix together the eggs, sugar, salt and flour until the mixture becomes smooth.

Add the milk, 2 tbsp Amaretto or almond extract and vanilla extract. Stir everything again until homogeneous. Transfer the mixture to the oven dish.

Put the Clafoutis with Cherries to bake for about 40-50 min. until your toothpick comes out clean when you stick it in the middle of it.

When you take it out of the oven, the cake is going to seem soft and runny but this is normal.

Leave it on a cooking grid to cool. In the meantime it will deflate as well. Sprinkle the cooled Clafoutis with Cherries with powdered sugar and serve.
