Ingredients

  • water - 1 1/5 cups (300 ml)
  • yoghurt - 4/5 cup (200 g)
  • eggs - 2
  • milk - 1 tbsp
  • oil - 3 tbsp
  • salt - 1 tsp
  • sugar - 1 tsp
  • yeast - 1 2/3 tbsp (25 g), fresh
  • flour - about 3 4/5 cups (900 g)
  • for the filling
  • eggs - 3
  • feta cheese - 10.5 oz (300 g)
  • for rolling it out
  • lard - 2/3 cup (150 g)

How to make

I made the dough in a bread maker on the knead and rise setting. Put the flour and salt at the very top. Once the dough rises, divide it into 3 parts. Melt the lard and shape each part into a rectangle with oiled hands.

Crumble the feta cheese and mix it with the eggs. Smear each rectangle with lard and sprinkle it with the filling.

Wrap the rectangles into 3 rolls and cut them into pieces. Arrange them in an oven dish laid out with baking paper, then smear them with the egg yolk diluted with the milk.

Without letting them rise again, put them in a preheated 390°F (200 °C) oven for 15 min. Lower the oven to 360°F (180 °C) and bake another 30 min.
