How to make
Mix a little of the warm milk, the yeast, sugar and a little flour in a bowl.
Leave it to activate well. In the meantime, beat the eggs with the remaining milk and ingredients. Add the effervescent yeast, stir well and decide whether you need more flour or not.
Cover the batter and leave it in a warm area. Check up on it - once it starts to rise you can start frying. Use a nonstick frying pan that you've smeared with a little oil.
Stir the mixture and pour in a ladle at a time, spread it out in the pan, flip over once holes start to form. Smear the ready pancakes with butter and fig jam.
