"You could call them Indian phyllo pastries but they`re definitely extremely delicious."

Ingredients

  • flour - 1 2/5 cups (350 g)
  • vegetable oil - 2 tbsp
  • salt - 1/2 tsp
  • curry - 1 tsp, powdered
  • garam masala - 1 tsp, if available
  • turmeric - 1/2 tsp
  • cayenne pepper - 1 - 2 pinches, optional
  • cinnamon - 1 pinch
  • water - 3/4 cup
  • for the filling
  • feta cheese - 3.5 oz (100 g)
  • parsley - 1 - 2 tbsp, chopped, fresh, can use coriander instead
  • oil - 1/3 cup (75 ml), for frying

How to make

Mix the ingredients in the order listed and gradually knead a smooth dough. Knead until it's well formed.

Mix the feta with the chopped parsley.

Divide the dough into 18 balls. Stretch out each one, put 1 tsp of filling in the middle of each and fold the edges. Carefully roll it out into a circle 1/4 (5 mm) thick.

Heat generous amounts of oil and fry the flat pitas on both sides.

This Indian bread is made with all kinds of fillings - with beans, feta cheese, meat or vegetables.
