Ingredients

  • eggs - 4
  • tomatoes - 2 1/2 cups (600 g), diced, canned
  • salt - to taste
  • black pepper - to taste
  • olive oil - 4 tbsp
  • green onions - 2 bunches
  • peppers - 4, red, roasted
  • pickles - 4
  • feta cheese - 7 oz (200 g)
  • sugar - 1 tsp
  • oregano - 1/2 tsp
  • paprika - 1/2 tsp, smoked

How to make

Cut the onions, pickles and red peppers finely.

Put the pan with the olive oil to heat up and add the onions, then after about 5 min. add the peppers and pickles, fry another 2-3 min.

Then add the tomatoes, salt, black pepper, oregano and let them cook for 15 min. Next, add in the sugar, smoked paprika and remove from the stove.

Transfer the mixture into a tray and sprinkle with the feta cheese in 4 places, breaking an egg over each.

Put it in a preheated 390°F (200 °C) oven for 10 min. for the eggs to harden a bit, or for as long as you like, depending on how you like your eggs.
