  • lemon juice - 1 tbsp

How to make

Take 5.3 oz (150 g) of smoke bacon and cut it into 4 slices about 1/8 thick. Toast each slice on both sides in a pan with a drop of oil. Once you've lightly toasted the bacon, leave it aside.

Prepare a small pot with about 4 fingers of water. Leave it to boil, then put 4 eggs in it to poach them. Once they're poached well, take them out and drain them from the water.

The next thing you have to do is make the Hollandaise sauce. First, separate 2 yolks and beat them with a mixer in a water bath. Once they whiten, immediately add 1 tbsp water, 1 tbsp lemon juice, 1 tsp ground white pepper.

Turn the stove off and continue stirring, immediately add 1/3 cup (80 g) of finely chopped butter. Stir vigorously until the sauce becomes smooth.

Once it's ready, set it aside and toast 4 slices of bread.

Once the toast is ready, arrange them in suitable plates. On top of each, place a piece of bacon, 1 poached egg, while also pouring in 1 tbsp of the prepared sauce and some finely chopped green onions.
