Ingredients

  • beef - 3.5 lb (1.5 kg)
  • bacon - 7 oz (200 g), smoked
  • cheese - 7 oz (200 g)
  • salt
  • black pepper
  • thyme
  • for smearing
  • black pepper - 1 tsp
  • mustard - 2 tbsp
  • beer - 3 1/3 tbsp (50 ml)
  • olive oil - 1 tsp

  • carrots - 9 oz (250 g), baby
  • potatoes - 2 - 3
  • apples - 1
  • black pepper
  • salt
  • thyme
  • honey - 1 tbsp
  • olive oil - 1 - 2 tbsp

How to make

Form 2 rectangular pieces from the meat and tenderize them with a mallet. Season with salt, black pepper and thyme. Sprinkle the diced bacon and cheese over them.

Roll up into tight rolls and tie them with thread. Put them in an oven dish, sprinkle with oil and pour in about 1 cup water. Cover with foil and bake at 390°F (200 °C) for about 1 hour 30 min. or until the meat is ready.

Remove it from the oven, remove the foil and smear the rolls with the prepared mixture of black pepper, mustard, beer and olive oil. Return to the oven for another 10-15 min. As a garnish, flavor the carrots and chopped into pieces apple and potatoes with salt, black pepper, a little thyme and olive oil.
