How to make
Cut the meat into tiny pieces, put them in an oven dish, pour in a little water or broth and bake until golden at 390°F (200 °C) for about 30 min. Clean the onions and cut them finely.
Put the olive oil in a deep pan or pot, heat it and add the onions. Braise until they soften and gain a golden color.
Grate the tomatoes, add the tomato paste to them and pour all of this into the onions. Season with salt, paprika and black pepper, bay leaf and sugar. Stir and add the baked pieces of meat.
Close the container wit a lid and saute on medium heat about 20 min. until the liquid evaporates.
Sprinkle with parsley and serve.
