Saute the chopped onions in the heated oil, add the cut into strips peppers, braise and add the chopped tomatoes and garlic - stir until the vegetables soften.
Cut each of the phyllo pastry sheets into 2 and smear them with oil. Form the baskets in a greased oven dish (or one you've laid out with baking paper).
To the braised vegetables, add the spice mix, as well as salt if desired, wait for it to cool and stuff the baskets. Break an egg on top of each and put them to bake in a moderately heated oven.
