How to make
For the dough you're going to need about 2 lb (1 kg) of flour, the rest of it is for kneading and rolling it out. Sift the flour, make a well in it and add the eggs, salt, yoghurt, vinegar and butter.
Heat the milk and crumble the yeast in it, stir, add the butter, sugar and a spoon of flour and leave it to become effervescent in a warm area. Knead all the products, while gradually adding from the yeast until fully absorbed by the other ingredients. You have to get a homogeneous, smooth dough.
Cover it with a clean towel and leave it to rise for an hour. You can shape it any way you like but to make the one in the photo you have to form the dough into a strip and then divide it into 10 approximately identical parts. Shape them into balls.
Roll out 3 of these balls into round sheets the diameter of a plate. Smear an oven dish with a little oil, place one sheet, then the other 2 on top and make a cross cut in the middle, without going all the way through. Cut these triangles in half, to produce a total of 8 triangles.
In the middle of each, make a slight incision, like a buttonhole. Take one triangle with your hand and pull it in the direction toward its opposite buttonhole and pull its vertex through it so it shows on the other side. Do this for all the other triangles.
Make the rest of the pita decorations in a similar way - take 4 of the dough strips, roll them out into sheets, put them on top of each other and make cuts the same way, although this time you have to cut them all the way through, so that the triangles are all separated. Make buttonholes again, pull the tips through the opposite ones.
Place each thus formed piece in the middle of the oven dish. From the remaining 3 balls, take 2 of them, and roll them out into 2 sheets about the diameter of a dessert plate, i.e. smaller ones.
Cut them and form them the same way like the previous ones. Put them in the innermost part of the oven dish. Use the last ball for decoration. Make smaller balls from it or other decorative elements and arrange them randomly in the oven dish.
Cover the oven dish with a towel or foil and leave the dough to rise again and at least visibly double its volume. Smear it with beaten yolk and add some sesame seeds or other seeds if desired. Put the oven dish in the oven and bake at 340°F (170 °C) for about 40-60 min. until golden.
