How to make
Beat the egg yolks with the sugar to obtain a smooth cream. Add the sifted flour with the baking powder, half the lemon rind and Baileys. Beat the egg whites to snow and carefully mix them into the mixture.
Pour the mixture into a cake form with lightly oiled baking paper. Bake the layer in a preheated 360°F (180 °C) oven until ready.
Leave it to cool and then cut it into 2-3 separate layers. In the meantime, make the creamy mix by beating the butter with the powdered sugar until you get a voluminous and fluffy cream.
Separately, beat the 4/5 cup of cream into snow. Add it to the butter spoon by spoon and carefully combine the 2 creams.
Soak each layer carefully with several tablespoons of Baileys and stick them together with cream. Smear the entire cake with cream on the outside and if you have any left over, you can make a decoration by spraying on rosettes.
To make it more eye-pleasing, sprinkle lightly with sifted cocoa on top.
