Ingredients

  • pork - 3.5 lb (1.5 kg), clod or ribs
  • garlic - half a head
  • mushrooms - 9 oz (250 g), whatever kind you have
  • peppers - 2 red + 1 green
  • onions - 7 large heads
  • oil - 1 cup
  • wine - 1 cup
  • water - 1 2/3 cups (400 ml)
  • salt
  • black pepper
  • spices - by choice
  • parsley

How to make

Cut the meat into medium-sized pieces. Cut the onions into slices, cut the mushrooms and peppers coarsely. Cut the garlic into slices as well.

Fry the pieces of meat in a large pan in the oil, add the black pepper, salt and spices. Fry until golden. Afterward, use a slotted spoon to transfer the meat into a clay pot.

Add the chopped onions, peppers, garlic and mushrooms. In the pan where you fried the meat, pour in the wine and water, add salt and black pepper. Once it starts boiling, leave it to boil another 5 min. and pour it over the meat in the clay pot.

Put the lid on and place it in a preheated 370°F (190°C) oven. Let it cook for 3 1/2 hours. Then open it and add the parsley.

If you'd like it to redden - remove the lid and leave it for another 20 min. or so. If you like you can add 3-4 potatoes also, although in that case it'll almost start boiling (I know from personal experience) but will still turn out super.
