  • sugar syrup - or compote juice for syruping the layers

  • compote - 1 cup (250 ml), of juice
  • gelatin - 1/2 packet

  • water - 2/5 cup (100 ml)
  • butter - 3 1/3 tbsp (50 g)
  • flour - 1/2 cup (120 g)
  • powdered sugar - 2 cups (500 g), sifted

How to make

Beat the egg whites and sugar until whitened, add the egg yolks one by one, then the flour and vanilla, orange and lemon zest, while stirring with a spatula.

In one mixture, put the cocoa and chocolate. Bake the cake layers at 340°F (170 °C) in a preheated oven. Prepare the sugar dough by putting the water and butter to boil, then pour in the flour all at once and stir vigorously with a wooden spoon. Allow it to cool completely.

Begin to mix with the sifted powdered sugar until you get the desired consistency. Roll it out and cut out figurines, form roses. Begin putting the cake together in a cake form with removable sides. Put a cake layer at the bottom, syrup it a little, then smear with the beaten cream. Arrange sliced bananas on top (optional).

After you assemble the cake, put it in the refrigerator to harden a little. Then remove the sides of the cake form and smear the sides with cream.

Decorate with walnuts, caramelized nuts, chocolate, crushed biscuits, arrange the flowers and pour on the jellied juice.
