How to make
Peel the potatoes and cut them into large strips. Fry in a lot of oil in a nonstick frying pan with a lid on. Occasionally stir.
Then take them out with a slotted spoon and leave on a napkin to drain their fat. Sprinkle them with salt and pepper. They turn out quite fragile, but greasy, so be sure to serve them with something sour.
I garnish them with roasted marinated peppers.
