  • flour - 1 1/5 cups (300 g)
  • butter - 4/5 cup (200 g)
  • sugar - 1/5 cup (70 g)
  • salt - 1 pinch
  • eggs - 1
  • cherries - 17.5 oz (500 g)
  • for the topping
  • liquid cream - 2/5 cup (100 ml)
  • sugar - 3 tbsp
  • starch - 1 tbsp

How to make

Make a dough by sifting the flour twice, making a well in the middle to put in the sugar, salt, cut into pieces butter and the egg.

Cut it with a knife until you get crumbs and then knead a stretchy dough. Form a ball and put it in the refrigerator for 4 hours. Roll it out and put it in a buttered tray, forming high walls.

Pierce the dough in several spots with a fork and put cherries on top, with the pits removed beforehand. Bake the dough with the cherries for 10 min. at 430°F (220°C).

Remove from the oven, pour on the topping made from the mixed together sugar, starch and cream. Bake for another hour or so, take it out and leave to cool in the form.
