Ingredients

  • tomatoes - 2, large, ripe
  • green onions - 2 bunches
  • red onions - 1 small head
  • parsley - 1/2 bunch
  • lemon juice - 1 tsp
  • olive oil - 3 tbsp
  • salt
  • black pepper
  • eggs - 2

How to make

Beat the eggs with a little salt and pepper and fry the omelette in a nonstick pan with oil.

Let the prepared omelette cool and rip it to pieces. If desired you can add your favorite spices to the omelette.

Cut the tomatoes to pieces in a bowl, add the chopped green onions and parsley, as well as the red onions that have been chopped into thin crescents and add the omelette.

Season the salad with salt, pepper, lemon juice and a little vinegar and then stir carefully with the olive oil.
