Ingredients

  • chickpeas - 1/2 cup
  • rice - 1/2 cup
  • wheat - 1/2 cup
  • sugar - 1 1/2 cups
  • hazelnuts - 1/2 cup
  • walnuts - 1/2 cup
  • pine nuts - 1/2 cup
  • vanilla - 2 packets
  • raisins - 1/3 cup
  • dried fruits - 1/2 cup figs, apricots, dates
  • oranges - zest of 1
  • rose water - 2 tbsp
  • for garnishing
  • cinnamon - 2 tsp
  • almonds - 1/2 cup
  • walnuts - 1/2 cup
  • pomegranate - seeds

How to make

Soak the chickpeas overnight. Drain them the next day, rinse and pour on 1 gal (4 L) of water. Boil until softened.

Wash the wheat and rice with large amounts of cold water to get rid of their starch. Pour on 12 1/2 cups (3 L) and boil on moderate heat about 1 hour. Stir often, then combine with the boiled chickpeas.

Pour boiling water over the dried fruits and leave them to soak for 30 min, then drain them and cut into pieces. Save the water used for soaking.

Add the cut fruits, crumbled nuts, sugar and hazelnuts to the rice, wheat and chickpeas. Pour in the set aside fruit water and bring to a boil. Boil the Ashure for about 30 min. on low heat while stirring constantly.

Flavor with vanilla and grated orange rind. Add the raisins and boil 10-15 min. while stirring.

Remove the ready dessert from the stove, sprinkle with rose water, cinnamon, pomegranate seeds, walnuts, almonds and leave it to cool at room temperature for at least 1-2 hours.
