How to make
Cut a pocket in each fillet and put the smoked cheese in it. Season with salt and black pepper to taste.
Wrap each fillet with 2 slices of bacon, slip a basil leaf under each bacon slice.
Stick toothpicks in to keep it all together. Place the fillets in a tray smeared with olive oil.
Spray a little olive oil on top and bake in a preheated 390°F (200 °C) oven for about 30 min.
