How to make
Put the boiled potatoes to dry in a pan without oil, then let them cool.
Mix them with the crumbled feta cheese and mint and season with salt and black pepper.
Keep the phyllo pastry sheets soft in a moist towel. Grab 1 phyllo pastry sheet at a time, smear it with olive oil and cut it into 3 long strips, then cut those into squares.
Put stuffing in each of them and wrap up into triangles, pressing the edges well so that the filling does not spill out.
Arrange them in an oven dish and smear them with the remaining olive oil. Bake in a heated oven for about 15-20 min. Serve the bites warm.
