Ingredients

  • onions - 3 - 4 heads
  • rice - 1 cup (250 g)
  • eggs - 4
  • potatoes - 4.5 lb (2 kg)
  • oil - 1 cup
  • tomato paste - 2 tbsp
  • parsley - 1 bunch
  • for the topping
  • potatoes - for mashing
  • eggs - 4 - 5
  • butter - 1/5 cup (60 g)
  • yoghurt - 1 cup

How to make

Fry the finely chopped onion in heated oil. Add the washed rice, stir several times and pour in hot water, season with salt, black pepper and paprika and put the lid on. Boil the rice until it swells.

Once the boiled rice cools, mix it with the eggs and chopped parsley.

Peel the potatoes, cut them in round slices and braise in heated oil or butter. In an oven dish, arrange a layer of rice, a layer of potatoes, pour in the tomato paste that's been diluted in some water and put some pieces of butter. Put the moussaka to bake until ready.

Boil a few more potatoes, mash them into mush, cool them a little and mix with 1-2 eggs. Season this with salt and black pepper and pour it over the moussaka. Top off with the yoghurt, beaten with eggs and put it back in the oven to crisp.
