How to make
Peel and cut the potatoes into circles, which should be about half a centimeter thick. Arrange them in a greased baking dish (they can overlap). Sprinkle with salt, a little black pepper, thyme and olive oil. Bake in a preheated oven at 370°F (190°C) until they are browned. During baking, you can turn them or sprinkle with a little water in case they are of a firmer variety of potatoes, so that they do not remain dry or too hard.
For this casserole recipe you can also use already boiled and sliced potatoes, but I personally like them better when they are baked in the oven.
While you are waiting for the potatoes, prepare everything else: Cut the broccoli for the casserole into florets and blanch them in boiling salted water for 7-8 minutes. It depends on whether you like them softer or crunchier. In general, it is not good to let them soften too much, because they also lose their fresh color and start to fall apart.
When they are ready, remove them from the water with a slotted spoon.
Boil the eggs, peel them and cut them into circles.
Once the potatoes are baked, remove them from the oven and arrange the eggs and broccoli on top. Sprinkle with grated cheddar and emmental, a little salt and place pieces of blue cheese here and there.
Make the topping for this gorgeous potato casserole:
Chop the onion and fry it in olive oil.
Grate the zucchini and add it to the onion as soon as it softens. I use zucchini with a dark green skin, because this variety releases a little less liquid.
Add salt and simmer for 15 minutes over medium heat, then remove the lid and increase the heat. Stir for another 2-3 minutes and remove from the heat.
Leave it like this for a few minutes to cool down, then transfer into a blender and add 3.5 oz (100 g) of shredded cheddar, the three egg yolks, 9 oz (250 g) of quality thick yogurt, a little salt and freshly ground pepper. Blend well until a homogeneous mixture is obtained.
Pour the vegetables and eggs into the pan and put it back in the oven at 390°F (200°C) (with fan) for about 15 minutes or until it is baked enough for you. If you want, you can put grated Emmental or yellow cheese on top of the topping, but for me personally, the cheeses inside the casserole are enough.
