How to make
Pick out mushrooms that are in season, wash them and cut them if necessary. Heat a little butter in a large pot and fry the chopped onions.
Add the mushrooms and once they fry as well, pour in enough hot water.
Boil until the mushrooms soften and add the rice/vermicelli. Finish boiling it and season the soup with the spices - tarragon, ground black pepper and salt to taste.
The soup has a unique spicy flavor due to the combination of different mushroom types. It is because there aren't too many spices added that the flavor is retained.
