For the Bolognese sauce, first season the minced meat with cumin, salt and black pepper, if you bought seasoned minced meat in a package.
Then fry the minced meat and add the chopped onion - stew for a few minutes and add the tomatoes. After 5 minutes, add the spices, tomato puree and water. Let it thicken for 10 minutes and remove it from the heat, cover it and set it aside.
For the Béchamel sauce, melt the butter and add the flour while stirring constantly - until a mixture is obtained, immediately add the milk and stir constantly until it thickens. Remove from the heat and season with salt and black pepper.
We have reached the essential part: Choose a suitable baking pan so that the sheets cover the walls.
We put 3 sheets on the bottom so that it is stable and does not fall apart later. On the first layers, we add the Bolognese, then - the Béchamel and the yellow cheese, and 1-2 sheets. We add a little Béchamel, because we will need it for the end.
We repeat this until the second before last layer, then we add only the Bolognese sauce and place the last sheets (recommended to be 2) and pour all the Béchamel, grate more yellow cheese and put in a preheated oven at 390°F (200°C) (top and bottom heating element on) for 30 minutes. Finally, we switch to the grill for 10 minutes to bake the yellow cheese.
