"A typical Italian apple cake recipe with a delicate taste and a hint of lemon that you will remember for a long time."

Ingredients

  • eggs - 3 L
  • brown sugar - 4.4 oz (125 g)
  • melted butter - 4.4 oz (125 g)
  • greek yogurt - 5.3 oz (150 g)
  • all - purpose flour - 10.5 oz (300 g)
  • medium - sized apples - 3
  • baking powder - 1 tbsp (10 g)
  • salt - 1 pinch
  • peel and juice of 1 lemon
  • vanilla sugar - 0.35 oz (10 g) ot 1 tsp. vanilla essence

  • milk - 17 fl oz (500 ml)
  • egg yolks - 4
  • white granulated sugar - 4.2 oz (120 g)
  • all - purpose flour - 2.1 oz (60 g)

  • cinnamon sugar - for sprinkling

How to make

This apple cake is a typical Italian recipe. It has a delicate taste and has a wonderful aroma of lemon.

To prepare it, you need very simple ingredients - eggs, sugar, flour, butter and apples.

This is a moist and delicious cake and the addition of cream makes it very juicy.

Pasticcera Cream

In a saucepan, heat the milk and the whole lemon peels, until boiling point.

In a bowl with a wire whisk, beat the egg yolks, sugar, add the flour and vanilla sugar.

Pour about 3.4 fl oz (100 ml) of the hot milk, stir and pour the entire mixture to the milk. Boil a thick cream while stirring with the wire whisk.

Remove from the heat, transfer onto a flat plate, cover tightly with foil and leave it to cool completely.

Cake

Peel two of the apples and cut them into medium-sized cubes. Sprinkle with the lemon juice, stir and set aside.

In a bowl with a mixer on high speed, beat the eggs and brown sugar until the mixture increases in volume and thickens, about 5 -7 minutes.

Add the melted butter and beat on medium speed.

Add the yogurt and beat until smooth.

Next, add the sifted flour, a pinch of salt and baking powder. Add it in three parts and beat on low speed, just until homogeneous.

Add the diced apples and mix to distribute evenly.

The batter is heavier than cake batter.

Prepare a 9.5″ (24 cm) diameter ring mold with baking paper on the bottom, grease the sides, lightly sprinkle them with flour.

Pour half of the cake mixture, spread it out evenly.

Place half of the cream in a piping bag with a small slit and add the cream on the cake dough in spirals.

Spread the remaining cake batter with the apples on top. Distribute it, because it is heavy, use the back of a spoon slightly moistened with water.

Make cream spirals on the batter again.

Peel the last apple and cut it into medium-thin slices, which are inserted into the gap between the cream spirals and the batter.

Sprinkle the apple cake with cinnamon sugar.

Bake the apple cake in a preheated oven with a fan at 340°F (170°C) for about 50 - 60 minutes. Keep in mind that when you insert a toothpick to check its readiness, it will come out with a few crumbs, this is due to the moisture from the cream. If the apple slices start to burn during baking, cover with aluminum foil.

After cooling, sprinkle the apple cake generously with powdered sugar.
