How to make
Chop the garlic, onion and leek and sauté them until soft in the butter and olive oil together with the chili pepper. If you're making the soup for kids, just skip it.
Add the cleaned and chopped broccoli and potato.
Pour in the vegetable broth, add the salt and cook covered for 30 minutes.
Check that the potatoes are cooked and if necessary, continue cooking for a few more minutes.
Remove from heat, add cheddar in small pieces and puree until creamy. Return to the stove for another 2-3 minutes.
Serve the delicious broccoli cheddar soup sprinkled with crumbled cheddar and crunchy croutons.
