How to make
We prepare a plain potato tortilla without onion or garlic, since the chorizo itself, with which we will serve the tapas, is quite rich in flavor and so is the jamon.
Detailed recipe for potato tortilla can be found here on the site, because I have written such many times. For this reason, I will not dwell on the details now.
In short, we peel and cut the potatoes into flakes. We put them in a large pile in a pan with oil, which should not cover them. Add salt and cook over moderate heat, stirring frequently, until the potatoes are soft and break easily.
Then we pour them into a large strainer, with a bowl underneath to strain the oil or olive oil into.
We wait a few minutes and pour the potatoes into another bowl with the beaten eggs with a pinch of salt. Mix well and transfer again into the pan, in which we put a little of the strained oil.
Cook the tortilla until nicely browned on one side, then turn it over to brown on the other side as well.
Cut it into squares and arrange in plate.
Place chorizo circles on half of the potato tortilla pieces, and jamón serrano on the other half. Optionally we can put together the tapas with toothpicks.
We serve and eat in company with a glass of red wine.
