How to make
Mix the butter, honey and sugar in a saucepan. Put it on low heat and let the mixture boil. Then add the soda and stir until the mixture stops foaming (this happens in 2-3 minutes) and the reaction of the soda with the honey is complete.
Allow the mixture to cool and add the beaten eggs while stirring continuously. Finally, add the sifted flour and mix. The mixture should be thick and sticky.
In a springform pan, line a sheet of baking paper, pour half the mixture and spread the mixture over the bottom with wet hands.
Bake in a preheated oven at 360°F (180°C) for about 15-20 minutes until golden brown.
Bake the two cake layers and cut each one in half horizontally, you get 4 pieces of thin honey cake layers. Allow the cake layers to cool while mixing the cream and sugar. Mix well.
Assemble the honey cake by stacking 3 of the cake layers on top of each other, spreading cream in between.
Crumble the fourth cake layer into crumbs, which you decorate the cake on all sides with. Refrigerate the Medovik Cake overnight, and the next day cut it into pieces and serve the delicious and aromatic Medovik Cake!
