How to make
You don't have to be vegan to try this apple cake. I often resort to this recipe when I don't have eggs and don't feel like going to the store. The result is surprisingly good and you will see that it is in no way inferior to cakes with eggs and milk.
Another plus of this cake is that you don't have to beat it for a long time with a mixer, but everything is done quickly and easily by hand.
First, mix the almond milk (you can use any plant-based milk) with the lemon juice, oil, starch, vanilla, cardamom and cinnamon in a bowl. Beat well.
Put the flour in parts, sifted with baking powder and salt. Beat again with a wire whisk until smooth.
Put the apple cut into small cubes into it and mix. You don't need to peel it. Set aside a quarter of it and cut it into thin crescents.
Pour the cake mixture into a springform pan - greased and floured (18 cm diameter). Arrange the apple slices on top.
Place in a 340°F (170°C) oven and bake for 30-35 minutes or until the vegan cake is golden on top. Check with a toothpick, if it comes out dry, it's ready.
Remove from the tin and leave it to cool on a wire rack, then sprinkle with powdered sugar and serve.
