Beat the butter with the sugar into a smooth cream. While continuously whipping, add the eggs, one at a time, followed by the rice flour with baking powder.
Finally mix in the coconut flakes and vanilla into the mixture. Pour the mixture into a greased form and put it to bake in a moderately heated oven for 30-40 minutes.
Smear the finished coconut cake with a jam of your choice and sprinkle with coconut flakes on top.
