How to make
Beat the eggs in a bowl. The skyr (or thick yogurt), cottage cheese, corn flour, baking powder, oil and salt are added to them.
With the help of a mixer, mix all the products until a thick, creamy mixture is obtained.
Paper capsules are placed in the muffin tins, then the prepared batter is placed in each one.
The mold is placed in an oven preheated to 360°F (180°C) and the savory muffins are baked for about 40 minutes or until fully baked.
Once removed from the oven, the baked muffins are left to cool slightly and are ready to be served.
The corn flour muffins with cottage cheese can be garnished with something else of your choice. For example with homemade ajvar.
